Sausage and Apple Fall Pizza

    September is here and the weather is starting to cool off.  This gets me to thinking about fall and all the wonderful flavors that fall has to offer, pumpkin and apple just to name a couple.  Which got me to thinking about what flavors I could incorporate to pizza Friday.  Apples came to mind as they can add both a sweet and tart flavor to the pizza.  I had some sausage in the freezer so I thought this would pair well with the apple giving it that savory and spicey component.  I wanted the flavors of the apple and sausage to come through, so I opted not to use a sauce with this pizza as it would mask the flavors.  I wanted to pair the flavors of the sausage and apple with a rich and tangy cheese like sharp white cheddar.  White cheddar can also add smooth a creamy taste that works for pizza.  I also appreciate the nutty and fruity notes of white cheddar cheese.  On the top of the pizza, I used a little mozzarella cheese to give it an extra creamy flavor. 

    Apple selection: I used Gala because it is an apple that I find to be mostly sweet with a hint of tartness, and I know I can find them easily in the store.  Other apples that would work well are Honey Crisp or Red Delicious.

    Additional tips:

    Dough: Before rolling out the dough it is always good to soften to almost room temperature, but not all the way.  This will make the dough easier to roll out.  Another tip is to take the ball and work it with your hands to form a circle working evenly to get it to almost the size you want in circle shape before finishing with rolling pin.  This will make for a rounder pizza crust.  I have not done this in the past and I end up with some funny shaped pizza crusts. 

     

    Ingredients

    • For: 1 2 slices (1/4 of pizza)
    • Preparation: 10 min
    • Cooking: 25 min
    • Ready in: 35 min

    Instructions

    1. Preheat pizza stone on bottom shelf of oven to 500 degrees Fahrenheit
    2. In 10-inch skillet brown sausage over medium-to-medium high heat, breaking apart into smaller ½ inch size pieces.
    3. When done add apple match sticks to sausage pan and cook for another 2-3 minutes to warm apple. Turn off heat and set aside.
    4. Roll out pizza dough to a 10-12-inch circle and pinch edges to form a crust.
    5. Poke the pizza dough several times with a fork to allow for air release and prevent dough from getting air bubbles. Brush with olive oil and garlic.
    6. Turn oven down to 450 degrees Fahrenheit. Place pizza on stone in oven and bake it for 7-8 minutes until light golden brown.
    7. Remove par baked crust from oven and top with shredded cheddar cheese, then top evenly with sausage and apple mixture.
    8. Lastly sprinkle the mozzarella cheese evenly on the top.
    9. Sprinkle with oregano and then place the pizza back in the oven on the pizza stone baking for another 7-8 minutes.
    10. Remove from oven, rest for 1-2 minutes then slice into 8 pieces and serve.
