Ham and Broccoli FritTOTa

    Weekend vibes usually involve not having to cook something that takes too much effort or just pillaging through the refrigerator for some leftovers from the week. Frittata is often one of my frequent go-to dishes for weekend brunch or dinner. Frittata is also a way to incorporate a lot of different vegetables and meats from the freezer to use them up. I also find that other than the time in the oven to cook it, the prep time is super quick and easy. I am still working on using up my ham from Christmas, so I thought it would make for a great frittata. I took a new spin on a typical frittata and swapped out the potato I normally use for tater tots. What a fun fritTOTa they created and super tasty.

    Cheese: I generally like to use a cheese that has some flavor kick in it to avoid making what can be a bland frittata.  Gruyere is frequently on my go to list.  I sharp cheddar would also work well in this dish.

    Instructions

    1. Preheat oven to 400 degrees Fahrenheit and cook tater tots according to package directions. You want them golden brown. This takes about 25 minutes. Once done remove from oven and sprinkle with ½ teaspoon salt.
    2. Turn oven temperature down to 350 degrees Fahrenheit after the tots are done.
    3. Meanwhile take broccoli and place in microwave safe dish. Microwave on high for 4 minutes. Just warm the broccoli and do not cook it all the way.
    4. Rough chop the broccoli and dice the ham.
    5. Heat 10-inch oven safe skillet over medium heat, about 1-2 minutes.
    6. Place in broccoli and ham and warm slightly, stirring while on the stove. About 2-3 minutes then remove from heat.
    7. Crack the eggs open and place into medium mixing bowl and whisk until they are well beaten.
    8. Add in ½ and ½, remaining ½ teaspoon salt, pepper and nutmeg and mix well. Stir in shredded cheese.
    9. Pour egg mixture into skillet with the ham and broccoli and combine well.
    10. Place skillet in 350-degree oven and bake for 20 minutes. You still want the eggs to be not fully set and wet on top.
    11. Remove from oven and add the cooked tater tots to the top. Return to oven and bake for 10-15 minutes longer until eggs are fully set.
    12. Remove from oven sprinkle with a pinch of coarse sea salt and let rest for 5 minutes before cutting into 8 pieces and serving.
