Mom’s Simple Homemade Chili

    Growing up I remember one of the comfort foods that we frequently had as the weather would turn cold was a bowl of homemade chili.  It was often a staple for Thanksgiving evening when my dad and the rest of the family were watching football on the TV, a big pot of chili would be cooking on the stove top.  The recipe was never that complicated and satisfied a house full of family guests.  We would devour the pot along with a box of saltine crackers.  I found some cute holiday crackers to serve with this bowl.

    My mom’s chili would use beef and beans.  Often my sister would pick out the beef and just eat the beans.  The rest of us enjoyed the combination of both the beef and beans.  I often turn to this recipe when I want an effortless weekend meal that comforts and satisfies.

    This recipe has a mild chili flavor.  If you want to spice it up, one could add a few dashes of hot sauce or ¼ tsp cayenne pepper.

    This recipe makes 3 servings.

    Ingredients

    Instructions

    1. Brown ground sirloin in Dutch oven on medium low heat. Break apart while browning into small pieces.
    2. When meat is mostly brown add diced onions
    3. When the meat is fully browned add diced tomatoes, tomato juice and beans to mixture and stir to combine.
    4. Add chili powder, paprika, salt and pepper. Stir the ingredients together
    5. Continue to stir once boiling turn to low and simmer for 15-20 minutes to allow chili to develop.
    6. Place in bowls and serve with crackers, biscuits, or bread. Or even top with shredded parmesan or cheddar cheese.
