Sassy Sloppy Joes

    Weekend vibes and after cooking meals all week long I am not in the mood to slave over the stove for hours. I was watching Sunny Anderson on The Kitchen talk about how she learned how to cook because she was lazy and cheap. I feel that way myself. I am too lazy to get dressed up to go to the store, too lazy and cheap to go out to eat, and too cheap to order food to be delivered when I know I can make delicious and more nutritious meals at home. My mind seems to always be thinking about food. What can I make? How to make food I enjoyed from childhood from scratch with less of the canned and processed components that I grew up on?

    We had been to the butcher recently and had a freezer full of ground sirloin that I had already made hamburgers with one weekend and I was looking to recreate the sloppy joes I had eaten and enjoyed from my childhood.  Although my childhood sloppy joe was with a canned version of sloppy joe mix, I wanted to add a healthier spin on that same flavor with some sass added to it.  The sassiness comes from mustard and pickle juice.  The sloppy joes came out so delicious and flavorful.  The tart sweetness of the pickle juice combined with the tang of the yellow mustard and the umami of the Worcestershire sauce what a mouth watering treat they were.

    Ingredients

    • For: 4 servings (1 sloppy joe per serving)
    • Preparation: 10 min
    • Cooking: 20 min
    • Ready in: 30 min

    Instructions

    1. Heat up 10-inch skillet to medium heat and brown ground sirloin. Sprinkle with a pinch of salt and pepper while browning.
    2. While browning meat dice up red onion.
    3. Add red onion to meat when meat is mostly brown, sauté for 2-3 minutes.
    4. Add ketchup, pickle juice, Worcestershire sauce, yellow mustard. Allow to come to gentle simmer and simmer for 5-7 minutes.
    5. Meanwhile, toast the hamburger buns. To toast under broiler setting in oven place thin coat of butter on the bun prior to placing on high setting of broiler. Check every minute and rotate while broiling. This took about 3-4 minutes for me. Another option is to place dry bun in toaster and toast until a nice golden brown.
    6. To serve place ¼ of sloppy joe mixture on toasted bun and top with 2 pickle chips and enjoy!
