Simple Skillet Fried Green Beans

    Green beans are not a vegetable that I am particularly fond of, so I don’t cook them often. However, my husband really likes them, so I try to buy and cook them every once and awhile for him. Usually if I eat green beans, I like to eat them in a green bean casserole where they are doused in a creamy sauce and topped with dried onions to mask their flavor other ways, I usually will eat them are with other mixed vegetables in a chicken tater tot casserole, again doused in a cream sauce.

    Over the holidays I was looking for a way to cook some green beans that would be simple and give the green beans some enhanced flavor, making them more desirable to eat.  I thought about frying them in a skillet to keep them whole and not allowing the green bean to get soggy.  This skillet frying method made for a very flavorful green bean.  I think this is the first time I remember eating a green bean that I didn’t want to stop eating them they tasted so delicious.  The secret I think is the frying green beans in butter gives it a creamier taste.  The sprinkle of salt enhances the flavor of the green bean while masking any bitter flavors of the vegetable and allowing the sweetness of the green bean to shine through.  Since I have discovered this new way, I will be making green beans more often.

    Ingredients

    • For: 3 servings

    • Ready in: 15 min

    Instructions

    1. Heat cast iron skillet over medium high heat
    2. When warm add butter
    3. When butter is melted and starting to bubble add green beans and toss with heat safe tongs to coat in butter
    4. Halfway through the cooking process 4 minutes, sprinkle with coarse sea salt.
    5. Allow the beans to heat up and toss in butter to cook until the green beans are heated and start to wilt a little 7-8 minutes.
    6. Once the beans are cooked turn off heat. Green beans can sit in pan to keep warm until time to serve.
