The Yellow Pig Pizza

    Another week and pizza Friday was looming upon me. Again, I was tired of the same old thing and longed to create something new, exciting and different. I had some left-over ham in the freezer from Christmas that I was looking to use up. I then thought I would create a pig meat focused pizza and thought bacon and sausage would further add to the flavor of the pizza. I felt barbeque sauce pizzas have been over done and wanted a new type of sauce as the base of the pizza. I must give my credit for this one to my husband who suggested using mustard sauce to go with the pizza and this is how the Yellow Pig Pizza came into creation. The yellow is the mustard base and the pig from the sausage, ham and bacon. To pair with the saltiness of the bacon and ham I used white cheddar and mozzarella cheese to give a creamy and mildly funky flavor to the pizza. This is a filling pizza, and 2 slices are more than satisfying.

    For the Crust:  I use my own pizza dough recipe to create a soft, pillowy crust.  My dough recipe will make 3 crusts.

    Mustard options:  For the mustard I chose stone ground for its bold flavor paired with the sweetness of a honey mustard Dijon. I think yellow mustard with honey mustard or yellow mustard with stone ground would work well too.

    Ingredients

    • For: 2 slices (per serving)

    Instructions

    1. Preheat pizza stone on the bottom rack of oven to 500 degrees for at least 15 minutes.
    2. While the oven is preheating brown the Italian sausage over medium heat in 10-inch skillet. Break up into small pieces while cooking until brown all the way through. Remove from pan and place on paper towel lined plate to drain.
    3. Then slice the bacon into 1-inch slices and cook over medium heat in the same skillet until brown and crispy. Bacon is done when you see foam starting to form over the bacon. Remove and place on paper towel lined plate to drain.
    4. Dice the ham and place it in the same skillet to reheat for 3-5 minutes until warmed through. Set aside when done.
    5. Roll out the pizza dough to form a 12-inch circle and place on parchment paper lined pizza peel or baking sheet.
    6. Brush the crust with a light coating of olive oil and spread minced garlic over the olive oil.
    7. Turn the oven down to 450 degrees and place parchment paper with pizza dough on preheated stone and bake for 8 minutes to get the crust crispy.
    8. Remove the crust from the oven with baking sheet or pizza peel. Spread the mustard mix over the top of the pizza.
    9. Add the shredded white cheddar cheese.
    10. Then sprinkle the ham, sausage and bacon evenly over the top of the pizza.
    11. Arrange the mozzarella slices over the top of the pizza.
    12. Place back in oven on pizza stone and bake for another 7-8 minutes.
    13. Remove from the oven and rest for 5 minutes. Cut into 8 slices and enjoy!
