Three Cheese Sausage Pizza
We were out of town visiting family on Friday, so pizza Friday came on Saturday. Whatever day is pizza Friday, pizza makes for a good weeknight or weekend meal anytime. I have made many sausage pizzas with just sausage, pizza sauce and mozzarella cheese. However, I was looking to amplify the sausage flavor this time. I am always experimenting with several ingredients to develop a pizza that satisfies all my taste buds. I found that by using several types of cheeses it really turns a plain sausage pizza into something extra special. The rich, creamy, salty and nutty flavor of the gruyere cheese pairs well with sausage. Mozzarella of course is a pizza mainstay cheese with its slightly tangy and milky flavor. The parmesan with its slightly sweet and nutty flavor adds that savory level of umami.
Ingredients
- 1/3 pound Italian ssausage
- 1/2 cup slivered red onion
- 1/4 cup pizza sauce (I make my own click link to discover recipe)
- 1 ball pizza dough (I make my own click link to discover recipe)
- 1-2 tablespoon olive oil
- 1 tablespoon Minced Garlic
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded gruyere cheese
- 1/4 cup shredded parmesan cheese
- 1 teaspoon dried oregano
- For: 1 pizza (makes 4 servings)

Instructions
- Preheat the oven with pizza stone in it to 500 degrees Fahrenheit, once heated for 10 minutes turn down oven to 450 degrees.
- Brown the sausage in frying pan until almost fully brown.
- Add the slivered red onion and sauté for 5 minutes longer with the sausage.
- Remove from heat and use paper towel to lightly pat the excess grease from the sausage and onion mixture.
- While cooking sausage and red onion mixture roll pizza dough into 12-inch circle and place on pizza peel.
- Poke dough with fork and baste with olive oil and minced garlic
- Par bake pizza dough on stone for 7-10 minutes until golden brown and almost crispy.
- Remove pizza crust from oven then top with pizza sauce, mozzarella cheese, sausage and red onion mixture, gruyere cheese, parmesan cheese and then sprinkle with dried oregano.
- Place back on pizza stone and bake another 6-8 minutes until cheeses are melted.
- Remove pizza from oven and rest for 3-5 minutes before slicing into 8 pieces.
